Happy New Year!

It's officially 2011, how weird is that? This year Alyster is turning 6 and will be in 1st grade AND we will have another child in the house! Time is flying! I'm so excited about what the future holds. Last night was exactly the way I wanted to spend the last day of the year. David, Alyster and I spent the evening at my mom and dads house with some great friends. It was so fun and laid back, we played games and ate an insane amount! You know me, when I get the opportunity to cook for others, especially fun finger foods, I'm all over that! I usually start stressing and running behind, but last night I did good (with Davids help, of course). I decided to make some BBQ meatballs in - you guessed it - my crock pot, a cheese and pepperoni pizza and some "cows in a blanket" as I like to call them. I absolutely loved the meatballs! The recipe is really simple I tweaked the sauce and it turned out awesome. Here's my recipe:

2 bags of frozen homestyle meatballs. (homemade is always better, but I didn't have enough time) also, I was feeding a crowd and 2 bags was plenty... I had just enough leftover for lunch today :)
1 large bottle of BBQ sauce. I used sweet baby rays this time.
1 bottle of raspberry chipotle sauce
Place the frozen meatballs in crock pot and pour raspberry/BBQ sauce mixture over them. Set the temp on high for 2 1/2 hours or low for 4-6 hours.

My cows in a blanket are a favorite for David and Alyster. I make them in the morning for breakfast and they taste very similiar to kolaches. Super easy to make. Obviously I am more in the semi-homemade cooking ways then from scratch, but I do hope to move up to that eventually!

"Cows in a blanket"
There were 15 of us and the recipe made 32. There were none left!

2 packages of crescent rolls.
1 package of all beef lil smokies.

Pre-heat oven to 375 degrees. Cut each crescent roll in half and place one link inside. Roll up just like a crescent and repeat until you have your desired amount. Bake 11-13 minutes or until golden brown. You can always serve them with a sauce on the side, like maybe a mustard sauce... That would be yummy. I served them on there own and it worked.

These two recipes were so easy and delicious!

I could not believe how much we ate last night! Not only was there meatballs, cows in a blanket and pizzas, but Aimee also had pasta with chicken, a cheese platter, anti pasta plate and shrimp cocktail! Oh yeah, and my parents had made tamales and pozole! Ayiyi, so much food and thinking about it now is putting me in a mental food coma! Here are a few pics from last night:

Poor Alyster was out by 10 I think. His bed time is 8:30 so he was pooped!

Well, a few more days till I'm 12 weeks! I cant tell if a little belly is starting to form or if I'm just bloated and full! I cant wait to start showing and wearing maternity clothing. It's weird, I know, but last pregnancy I didn't enjoy those things as much as I should have. I pretty much refused to buy maternity clothes until I absolutely had no choice! My good friend Elena gave me a motherhood maternity gift card for my birthday and I have been DYING to use it haha. Gotta be a little more patient though.
I've been doing better with drinking more water. The passed few days I have had some serious headaches and I'm pretty sure it has to do with my water intake (not drinking enough). I am so cautious with what I eat and drink this time around. I'm pretty sure I look up everything before I eat it which is not always a good thing. Everyone says something different. Just have to use my best judgement. July will be here before we know it and I just want a healthy baby and (hopefully) smooth labor and delivery!!

Weight pre-pregnancy: 106.5
Current weight: I'm waiting till the official weigh in on Tuesday :)
Week: end of 11th

Wishing everyone a happy and prosperous New Year!

Much Love
